I KNOW it’s the most important meal, so I’m trying. Here’s
a couple that I like.
¾ c plain low-fat yogurt
T smooth peanut butter
large bananas, sliced
c lightly sweetened multigrain clusters
a bowl, whisk together yogurt, peanut butter, and honey until smooth.
Divide half the yogurt mixture among 4 six-ounce glasses or custard
cups. Top with half the banana slices and half the multigrain clusters.
Repeat layers once. Serve immediately. Makes 4 servings.
c regular rolled oats
c quick-cooking barley
c bulgur or cracked wheat
c dried cranberries, snipped dried apricots, or raisins
c sliced almonds, toasted
T ground cinnamon
a large bowl, stir together oats, barley, bulgur, cranberries, almonds,
sugar, cinnamon, and salt. Cover tightly and store at room temperature
up to 2 months (stir or shake mixture before measuring).
2 breakfast servings, in a small saucepan, bring 1 1/3 c water to
boiling. Add 2/3 c of the cereal mix. Reduce heat. Simmer, covered for
12-15 minutes or until cereal reaches desired consistency, stirring
occasionally. If desired, serve with milk. Makes four 2/3 c servings.
1 breakfast serving, in a 1 qt. microwave-safe bowl, combine ¾ c water
and 1/3 c cereal mix. Microwave uncovered on 50% power for 8-11 minutes
or until cereal reaches desired consistency. stirring once. Stir before
serving. If desired, serve with milk.
