As you know, Valentine’s Day is this Thursday. Love is on many of our minds. Did you know that in the Greek language there are four different words for the kinds of love? Unfortunately, in the English language, there is only one. Love is one of the most powerful emotions, yet so very hard to define in a single word.
 
For now, I want to focus on the kind of love Jesus spoke of many times: a love that is kind, gentle, caring, and expects nothing in return. It is a love that is hard to explain and comes from deep within. Carol and I have been married almost 49 years. We still struggle with trying to explain this love we have for each other.
Perhaps, this is why Valentine’s Day is such a special day. It gives everyone the opportunity to express with flowers, a card, or perhaps a box of chocolates, the kind, gentle, caring love they have for another individual, while expecting nothing in return.

Maple Glazed Salmon
When it comes to fish dishes, I like to keep it very simple. The less ingredients, the better! You will love the salty-sweet of this maple glaze.
Ingredients:
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1/8 teaspoon ground black pepper
  • 1 pound salmon
Directions:
  1. In a small bowl, mix the maple syrup, soy sauce, garlic, and pepper.
  2. Place salmon in a shallow glass baking dish and coat with the maple syrup mixture. Cover the dish and marinate salmon in the refrigerator 30 minutes, turning once.
  3. Preheat oven to 400 degrees.
  4. Place the baking dish in the preheated oven and bake uncovered 20 minutes, or until easily flaked with a fork.
