"Goodbye Santa, until next year…"

My mom and dad are talking about taking the sparkly tree down real soon and putting all the Christmas decorations away!  ‘What?!  Why would you do that?  Isn’t that how Santa found us?  How can he find us without the sparkly tree and without my buddies here in the window?’ 

That’s when my dad told me that Santa visits only once a year.  How wrong is that, I ask you?  I just made a new friend and now, now I find out I won’t see him for a whole year!  Pssst, gotta tell ya, I’m not sure how long a year is, but it sounded like I wasn’t going to see Santa for a looong time.

Gosh, I’m really gonna miss my new friend.

Fresh cut flowers, floral arrangements, centerpieces, and gift items are available at both our Cottage Grove and Edgerton Floral Shops year round.  Fresh new floral designs are created on a regular basis.

Here’s a wonderfully colorful minestrone soup that will keep you well nourished and warm. I like this minestrone because it’s just like classic minestrone, though light on the tomatoes and jazzed up with squash. This is perfect to have a big batch in the fridge or freezer so you can grab a bowl when you’re short for time, stressed, or maybe feeling a little of the winter blues and it’ll give you energy and just make you feel good. Plus, the colors will brighten your day!

Minestrone Soup with Butternut Squash

  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 1/2 cups 3/4-inch diced Yukon gold potatoes
  • 2 1/2 cups 3/4-inch diced butternut squash (you can use pre-cut)
  • 1 medium zucchini, ends trimmed, sliced into half moons or quarters
  • 1 (14.5 oz) can diced tomatoes
  • 2 1/2 tsp finely minced fresh rosemary or oregano (or 1 tsp dried)
  • 2 1/2 tsp minced fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • Salt and freshly ground black pepper
  • 2/3 cup dry ditalini pasta (optional)
  • 2 cups packed chopped kale (thick ribs removed)
  • 1 (14.5 oz) can red or white kidney beans, drained and rinsed
  • Shredded Parmesan cheese, for serving (optional)
  1. Heat olive oil in a large pot over medium-high heat. Add onions and carrots and sauté 3 minutes then add garlic and sauté 1 minute longer.
  2. Stir in vegetable broth, potatoes, squash, zucchini, tomatoes, rosemary, thyme, bay leaves and season with salt and pepper to taste. Bring to a boil then and stir in pasta if using. Cover, reduce heat to medium low and simmer until veggies are nearly tender, about 15 minutes.
  3. Stir in kale and kidney beans and cook until kale is tender, about 5 minutes longer. Remove bay leaves, serve warm with Parmesan cheese.
